The hygienic quality of some different foods used at students' hostel of the Aristotelian University of Thessaloniki were examined. The microbiological loads of 1370 specimens and the physicochemical parameters of 992 were analysed. The hygienic quality of the most examined foods generaly found to be in satisfying condition.
