Cambylobacter jejuni has been considered as one of the major microbial agents causing enteritis to human. Many investigations have shown that relatively small C. jejuni populations can survive in under-cooked poutry carcasses causing food poisoning. However, sufficient thermal processing of poultry meat can destroy C. jejuni population rendering meat products free of C. jejuni. This review deals with the contamination way of poultry carcasses by the pathogenic microorganism and also, the transfer of the infection of C. jejuni from poultry meat to humans.
